Our head chef has more than 20 years' experience in long-standing Kyoto cuisine restaurants. His dishes are genuine first-rate Japanese cuisine made from fresh, local ingredients from the Shimabara Peninsula. The same amount of attention is given to the bowls and utensils, from the Wajima-nuri lacquerware to the Aritayaki porcelain and Unzen-style pottery.
